Avocado Cilantro Caesar Dressing

This dressing is absolutely delicious and versatile. It has become one of my favourite dressings I have ever made. It is thick and garlicky like a typical caesar dressing with an avocado and mild cilantro twist! It tastes so good, I have put it on almost everything. Salads (of course), toast, pizza, pasta, buddha bowls, you name it!

You can add more lemon, put less lemon. Add more avocado or put only half the amount. and no, it does not taste like guacamole! It is the perfect green dressing. TRY IT OUT!!

This makes about 1 1/2 cups of dressing! Store in the fridge in a glass container for up to one week.

  • 1 Avocado, ripe
  • 1 Green Onion
  • 1/3 cup Cilantro, loosely packed
  • 1 lemon, juiced
  • 2 tbsp Garlic, minced
  • 1/2 tsp Salt, or more to taste
  • 10 grinds Black Pepper, or more to taste
  • 1 tbsp Nutritional Yeast
  • 1/3 cup + 2 tbsp Avocado Oil or Olive Oil
  1. Puree in a food processor the avocado, green onion, cilantro, lemon juice, garlic, salt and pepper. 

  2. On low speed slowly add the avocado oil.
  3. Once finished adding in the oil turn off. Add nutritional yeast and pulse until combined.

  4. Taste and adjust salt and pepper to your liking.

  5. Place in a glass container and refrigerate for at least one hour before serving.
